Our cellar master

Our oenologist Stephan Rohregger lives his great passion for wine. He consistently pursues the concept of terroir, emphasizing the unique combination of soil, climate, grape variety and the human factor in terms of vineyard management and winemaking process. With great care and professional expertise, he contributes to our wines distinctive character.

Wine making

The perfect vessel for each wine

In accordance with our wine lines, we employ different winemaking techniques and styles ranging from the classic aging in concrete vessels or large and small oak barrels as well as further refinement and maturation in the bottle. With utmost precision and commitment, we carefully choose vessels of varying capacities and characteristics to accentuate the unique qualities of each wine, while preserving the true essence of the grape varieties and vineyards.

Concrete Barrels
Total volume: 5.000 - 35.000 l
Influence on the wine: Our wines undergo fermentation and aging in concrete vessels, which allows for a minimal yet consistent exchange of oxygen. This results in fresh, approachable wines with a primary fruit bouquet aroma.
Stainless Steel tanks
Total volume: 1.000 - 12.500 l
Influence on the wine: Since the introduction of concrete vats as fermentation vessels, we primarily use our stainless steel tanks for intermediate storage. The hermetic sealing of oxygen preserves the wine until bottling, ensuring optimal conservation.
Large Oak barrels
Total volume: 1.500 - 5.000 l
Influence on the wine: During maturation in wooden barrels, a continuous exchange of oxygen occurs due to the porous surface of the wood, giving the wine elegance and body. In large wooden barrels, the taste of the wood is more subtle due to the size of the container and does not overpower the wine's natural flavors.
Tonneau
Total volume: 450 l
Influence on the wine: The tonneau barrel, due to its size, has a greater surface area of wood per volume of wine compared to other types of vessels. This results in an increased exchange of oxygen between the wine and the barrel, which accelerates and optimizes the wine's maturation and development. The result is elegance, balance on the palate, and longevity.
Barrique
Total volume: 225 l
Influence on the wine: Barrique barrels offer the highest ratio of wood surface area to wine, leading to a greater oxygen exchange and resulting in expressive and elegant aged wines. The distinct wood aromas are prominent but not overpowering on the palate and contribute to the unique character and refinement of the wines.
Maturation & aging in the bottle
Total volume: 0,75 - 3 l
Influence on the wine: After being bottled, the wines of the Turmhof selection (6 months) and Linticlarus as well as Vigna (12-24 months) mature under ideal conditions in wine storage until they are sold. This gives the wines time to develop harmony and balance.
